Step 1: Filling:

Ingredients:

  • 2 cups dates, finely chopped
  • 3/4 cup sugar
  • 3/4 cup water
  • 1/2 cup nuts, chopped

Instructions:

Cook ingredients for filling slowly, stirring constantly until thickened. Set aside.

Step 2: Cookies:

Ingredients:

  • 1 cup shortening or margarine, softened
  • 2 cups brown sugar
  • 2 eggs
  • 1/2 cup water
  • 1 tsp vanilla
  • 3 1/2 cups flour
  • 2 Tbsp SACO Cultured Buttermilk Blend
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp cinnamon

Instructions:

Preheat oven to 400°F. Mix margarine, brown sugar and eggs well. Stir in the water and vanilla. Sift together the flour, Saco Cultured Buttermilk Blend, salt, baking soda and cinnamon. Combine will the creamed mixture. Drop by teaspoon onto ungreased baking sheet. Place 1/2 tsp of date filling on dough. Cover with 1/2 tsp of dough. Bake for 10 to 12 minutes or until lightly browned.

This Recipe Yields: 4 dozen cookies.
