Step 1: Cookies:

Ingredients:

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup water
  • 1 Tbsp SACO Cultured Buttermilk Blend
  • 3 1/2 cups flour
  • 1 tsp baking soda
  • 3/4 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1 cup chopped pecans
  • 1 2/3 cups vanilla milk chips

Instructions:

Preheat oven to 350°F. In large mixing bowl, beat butter and sugar until well blended. Add eggs and vanilla; blend thoroughly. Blend in pineapple and water; mix well. In a small bowl combine the Saco Cultured Buttermilk, flour, baking soda, cinnamon, salt and nutmeg. Gradually add to butter mixture, mixing well. Stir in pecans and vanilla milk chips. Drop by tablespoonfuls onto lightly greased cookie sheets. Bake 10 to 12 minutes or until lightly browned around edges. Remove from cookie sheet to wire rack. Cool completely. Frost and decorate if desired.

Step 2: Frosting:

Ingredients:

  • 4 Tbsp cream cheese, softened
  • 2 cups powdered sugar
  • 1 1/2 tsp SACO Cultured Buttermilk Blend
  • 2 Tbsp water
  • 1/2 tsp vanilla
  • 1/8 tsp salt
  • food coloring, optional

Instructions:

Beat all the ingredients together until light and spreadable. Frost and decorate cookies.

This Recipe Yields: 4 dozen cookies.
