Chocolate Mint Brownie Squares

1. Brownie
Ingredients
- 1/2 cup butter or margarine
- 5 Tbsp SACO Premium Cocoa
- 1 cup granulated sugar
- 2 eggs
- 1/2 cup all-purpose flour
- 2 Tbsp SACO Cultured Buttermilk Blend
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 cup nuts, chopped (optional)
Instructions:
Preheat oven to 350°F. Grease one 9-inch square baking pan. In medium saucepan, over low heat, melt butter. Stir in cocoa and sugar until well-blended. Add eggs, one at a time, beating well after each addition. Add the flour, Buttermilk Blend, vanilla and salt. Stir well. Do not overbeat. Stir in chopped nuts. Pour brownie mixture into greased pan. Bake 30 to 35 minutes, or until wooden toothpick tests done. Cook on wire rack. Frost with Mint Icing, chill, frost with Cocoa Glaze, chill. Serve.
2. Mint Icing
Ingredients
- 2 Tbsp butter or margarine
- 1 Tbsp powdered sugar
- 1 Tbsp evaporated milk or cream
- 3/4 tsp peppermint extract
- 2 drops green food coloring
Instructions:
Melt butter and whisk in cocoa. Beat in remaining ingredients until smooth and of spreading consistency.
3. Cocoa Glaze:
Ingredients
- 2 Tbsp butter or margarine
- 1/4 cup SACO Premium Cocoa
- 3 Tbsp water
- 1 1/4 cups powdered sugar
- 1/2 tsp vanilla extract
Instructions:
Melt butter. Beat in remaining ingredients until smooth and of spreading consistency.
