1. Brownies:

Ingredients

  • 1 cup sugar
  • 1/2 cup SACO Premium Cocoa
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 3 Tbsp butter, melted
  • 2 Tbsp applesauce
  • 1 tsp vanilla
  • 2 eggs
  • 3/4 cup flour

Instructions:

Preheat oven to 350°F. Grease an 8-inch square pan. Combine first four ingredients in a medium bowl. In a separate bowl mix butter, applesauce and vanilla. Drop in eggs, stir well. Add flour and and other ingredients and beat until smooth. Spread into prepared pan. Bake for 25 minutes or until moist crumbs cling to a toothpick when inserted in center. Cool.

2. Topping:

Ingredients

  • 1/2 cup cold milk
  • 2 Tbsp flour
  • 1/4 cup butter, softened
  • 1/4 cup shortening
  • 1/2 cup sugar
  • 1/2 cup flaked coconut
  • 1/4 tsp coconut extract, optional
  • 1/2 cup SACO Chocolate CHUNKS
  • 1/4 cup heavy whipping cream

Instructions:

Mix milk and flour in a 2 cup microwave bowl. Cook in microwave for 2 minutes, stirring after 1 minute. Cool to room temperature. In medium mixing bowl cream together butter and shortening. Beat in to the cooked mixture until well-blended. Stir in coconut (and coconut extract if desired). Spread over cooled brownies. Warm the Saco Chocolate Chunks and heavy cream in the microwave for 30 seconds, stir, cook additional 15 seconds until completely melted and smooth. Pour over coconut layer. Store in refrigerator. Serve cold.
