1. Cake:
Ingredients
- 4 oz German Sweet Chocolate
- 1 1/2 cups water, divided
- 2 cups flour
- 4 Tbsp SACO Cultured Buttermilk Blend
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup butter, softened
- 2 cups sugar
- 4 eggs, separated
- 1 tsp vanilla
Instructions:
Preheat oven to 350°F. Cover the bottoms of three 9-inch cake pans with wax paper. Grease sides of pans. Microwave chocolate and 1/2 cup of water in large mixing bowl until chocolate is almost melted, stir until chocolate is completely melted. Mix flour, Saco Cultured Buttermilk Blend and baking soda and salt together and set aside. Beat butter and sugar in large bowl with mixer until light and fluffy. Add egg yolks one at a time. Blend in the chocolate mixture and the vanilla. Add flour mixture alternately with the remaining 1 cup of water; mix well. Beat egg whites in small bowl with mixer until stiff peaks form. Stir into batter. Pour into prepared pans. Bake for 30 minutes or until toothpick comes out clean. Cool in pans 15 minutes. Remove waxed paper. Place first layer on a plate and top with frosting. Continue with other layers and finish by frosting top and sides.
2. Coconut Pecan Frosting:
Ingredients
- 4 egg yolks
- 12 oz evaporated milk
- 1 1/2 tsp vanilla
- 1 1/2 tsp sugar
- 3/4 cup butter or margarine
- 1 pkg coconut
- 1 1/2 cups pecans, chopped
Instructions:
Beat egg yolks, milk and vanilla in large saucepan with wire whisk until blended well. Add sugar and butter; cook on medium heat until thickened and golden brown stirring constantly. Remove from heat. Fold in coconut and pecans. Cool for spreading.
