Pumpkin Chocolate Chunk Cookies

1. Cookies:

Ingredients

  • 3/4 cup canned pumpkin
  • 1 cup sugar
  • 1/2 cup canola oil
  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup water
  • 2 cups flour
  • 1 Tbsp SACO Cultured Buttermilk Blend
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup SACO Chocolate CHUNKS

Instructions:

Preheat oven to 375°F. Mix together the first six ingredients. Blend until smooth. In a separate bowl combine remaining ingredients, except chunks; then combine with pumpkin mixture. Add Saco Chocolate Chunks. Drop onto lightly greased cookie sheets in tablespoon sized drops. Bake for 8-10 minutes.

2. Frosting:

Ingredients

  • 2 cups powdered sugar
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 2 1/4 tsp SACO Cultured Buttermilk Blend
  • 3 Tbsp water
  • 2 Tbsp cream cheese

Instructions:

Mix all ingredients and blend well until smooth. Swirl on top of cookies.

This Recipe Yields: 2 1/2 dozen cookies.
